Barbecued Chicken Breasts
For 4 servings, you will need 4 whole boneless chicken breasts, halved.
Marinade:
Wash chicken, pat dry. For marinade, mix together oil, soy sauce, lemon juice
and brown sugar. Place chicken breasts in a single layer in a glass dish. Sprinkle
with garlic, pepper, thyme or basil leaves and cloves. Pour marinade over chicken.
Let stand in refrigerator for at least 4 hours, turning chicken over from time to
time. (note: for picnics, put chicken and marinade in a ziplock bag. Actually, I
do that anyhow; it's less messy. And if you let the chicken marinade overnight, it
is SO tender...)
Place chicken on pre-heated BBQ grill, a few at a time. Baste with marinade.
Grill for about 5 minutes on one side. Turn over. Grill for another 5 to 9 minutes
on other side until chicken is fork tender, juices run clear when pierced with a fork
and chicken is lightly browned. Don't overcook.
That's all there is to it! Misha always makes enuff to share with us kitties, who
circle all arownd the table when they eet it owtside. She also uses more garlic than
the resipe calls fur; is gudgudgud!
This is really a resipe for yummy fud for CATS. Misha has had it fur a while, an says
it is fur hoomins, but we know it's REALLY fur cats, 'cawse it's so yummy. Get a copy
of this fur yur hoomins; convinse them to make it fur yu, I mean, THEM. Sinse they
don't all unnerstan cat-talk too well, the following is in hoomin-speek (furgive me).
4 Tbsp. oil
4 Tbsp. soy sauce
2 Tbsp. lemon juice
1 Tbsp. brown sugar
2 cloves garlic, minced or pressed
1 tsp. dried thyme or basil leaves
3 whole cloves
Dash pepper
